Abstract

Kelor (Moringa oleifera) Leaf Jam Production Study ABSTRACT Moringa leaf jam is a modification of jam product, which is usually produced with raw fruit ingredients, in recent study, however, was produced from raw vegetable and fruit ingredients. Application of vegetables as jam aims to diversify the processed food products in order to have diverse nutritional compositions that ensure the improvement of the nutritional quality of the society. This research was conducted to determine the effect of difference in ratio of moringa leaf slurry and pineapple slurry to the characteristics of moringa leaf jam. The research design used was Randomized Block Design (RAK) with five treatments and three replications. The treatment of moringa leaf slurry addition with pineapple slurry was P1 (10%: 90 %), P2 (20%: 80%), P3 (30: 70%), P4 (40%: 60%) and P5 (50% : 50%). The results showed that the difference in ratio of moringa leaf slurry and pineapple slurry on moringa leaf jam with different concentrations significantly affected the color, aroma, taste, texture, overall acceptance, aroma quality, texture quality, coarse fiber content, antioxidant capacity and pH, while the difference ratio of moringa leaf slurry and pineapple slurry has no significant effect on total dissolved solids of moringa leaf jam. From the result of objective analysis on the resulting moringa leaf roughness, the crude fiber content ranged from 1,4694-2,2943 (% bb), antioxidant capacity 187,23-240,27 mg / ml GAEAC, pH 4,57-4,90 , total dissolved solids 66,07 - 67,47%. Moringa Leaf Jam with the ratio of 10% moringa slurry produces the most preferred jam by the panelists, in terms of color, aroma, texture, taste, overall acceptance and aroma quality with crude fiber content 1,4694 (% bb), antioxidant capacity 187.23 mg / ml GAEAC, pH 4.57, total soluble solids 66.07%.
