Abstract

Food acceptability is the ability of a person to finish the food served according to their needs. Food acceptability in general can be seen from the amount of food consumed and food acceptability can also be assessed from answers to questions related to food consumed. The purpose of this study was to determine the relationship between food taste and food acceptability at Shanti Graha General Hospital. This study is an observational study with a cross sectional design conducted in March - April 2023. The number of samples in this study were 47 people. The data collected in this study consisted of primerry data which included sample identity, sample assessment of food taste, weight of food served, and weight of sample food waste. Secondary data in this study includes a description of Shanti Graha General Hospital. Data processing was carried out univariate and bivariate, and the statistical test used was the Spearman correlation statistical test. The results of this study showed that 31 samples (66.0%) rated the taste of food as appropriate and 29 samples (61.7%) with a lot of acceptability. The results of the Spearman statistical test showed that there was a significant relationship between food taste and food acceptability (p = 0.02). Suggestions can be submitted to the Shanti Graha General Hospital to pay more attention to the taste of food, especially on food taste indicators including aroma, seasoning, texture, and level of doneness, especially in the type of staple food dishes, as well as food temperature and cleanliness of food tools by making various modifications on the hospital menu
