Abstract

DESCRIPTION OF THE BACTERIOLOGICAL QUALITY OF CHICKEN MEAT IN BLAHKIUH VILLAGE MARKET ABSTRACT Cases of food poisoning or foodborne disease still require attention from all parties. Data from BPOM for 2019 Bali occupies the fourth position in cases of food poisoning in Indonesia. In Abiansemal District, food poisoning occurred in 2016 with 129 elementary school students being poisoned. The cause of food poisoning is 60% by bacteria. This study aims to determine the quality of broiler chicken sold at the Blahkiuh Traditional Village Market whether it is suitable for consumption. This type of research is descriptive quantitative. The research subjects were 10 chicken carcasses sold by traders at the Blahkiuh Traditional Village Market. Testing the bacteriological quality of Total Plate Count using PCA media with the pour plate method and multilevel dilution technique. The results of this study, out of 10 samples, 8 (80%) of the TPC calculation results exceeded the maximum bacterial contamination value and 2 (20%) samples were within safe limits. The lowest TPC with a value (9.8 x 105 Cfu/g) while the highest value (3.1 x 106 Cfu/g). The conclusion of this study is that the results of bacteriological examination of the quality of chicken meat at the Blahkiuh Traditional Village Market are 80% contaminated with bacteria, so it needs to be processed properly so that the chicken meat remains safe for consumption. Key words: Chicken, Foodborne Disease, Total Plate Count GAMBARAN KUALITAS BAKTERIOLOGIS DAGING AYAM POTONG DI PASAR DESA ADAT BLAHKIUH ABSTRAK Kasus keracunan makanan atau foodborne disease masih memerlukan perhatian dari semua pihak. Data dari BPOM tahun 2019 Bali menduduki posisi keempat kasus keracunan makanan di Indonesia. Di Kecamatan Abiansemal pernah terjadi keracunan makanan yakni di tahun 2016 dengan korban keracunan 129 siswa sekolah dasar. Penyebab keracunan makanan tersebut adalah 60% oleh bakteri. Penelitian ini bertujuan untuk mengetahui kualitas daging ayam potong yang dijual di Pasar Desa Adat Blahkiuh apakah layak untuk dikonsumsi. Jenis penelitian ini adalah deskriptif kuantitatif. Dengan subjek penelitian 10 karkas daging ayam potong yang dijual oleh pedagang di Pasar Desa Adat Blahkiuh. Dilakukan pengujian kualitas bakteriologis Total Plate Count menggunakan media PCA dengan metode pour plate dan teknik pengenceran bertingkat. Hasil penelitian ini dari 10 sampel 8 (80%) sampel hasil perhitungan TPC melebihi nilai maksimum cemaran bakteri dan 2 (20%) sampel yang dalam batas aman. TPC terendah dengan nilai (9,8 x 105 Cfu/g) sedangkan nilai tertinggi (3,1 x 106 Cfu/g). Dapat disimpulkan bahwa hasil pemeriksaan kualitas daging ayamsecara bakteriologis di Pasar Desa Adat Blahkiuh 80% terkontaminasi bakteri sehingga perlu dilakukan pengolahan dengan tepat agar daging ayam tetap aman dikonsumsi.
