Abstract
MACRONUTRIENT VALUE ANALYSIS MAIN COURSE MENU AT HOTEL ADIWANA UNAGI SUITES UBUD, GIANYAR ABSTRACT In a food organization, from the process of selecting food ingredients to the processing process, it greatly influences the nutritional value contained in the food. In human life, where must grow, develop, and activities that require nutrients. According to the experience and observations of researchers at a hotel in Bali, there has never been a calculation of macronutrient value on the main course menu, after the food is finished processing the food is immediately served to the customer. energy, and macro-nutrients contained in 1 portion of the main course menu. The purpose of this study was to find out the analysis of the macro nutritional value of the main course menu at a hotel in the tourist area of Ubud, Gianyar. This research is an observational research, namely research by observing research subjects with a case study design, this research uses the entire main course menu with a total of 41 menus, samples are collected by recording and looking at the types of ingredients used and the weight of the ingredients in the hotel menu book. The results of this study are that there are 7 types of main course menus consisting of Asian menus, Indonesian menus, house of fried rice menus, pizza menus, pasta menus, western menus, vegan menus. The average macro nutritional value of the main course menu consists of an average value of energy of 692.02 kcal, protein of 34.13 grams, fat of 30.01, carbohydrates of 79.48 grams.
