Abstract

The purpose of this study was to utilize the waste from existing mango peels and to determine the organoleptic characteristics of mango peel chips with a combination of rice flour and tapioca flour. The research method used was the experimental method with 5 treatments and 3 repetitions, with organoleptic tests and hedonic quality. This type of research uses a randomized block design (RBD), the type of data collected is organoleptic test data and hedonic quality for the level of preference for taste, color, aroma, texture, overall preference and organoleptic quality including texture quality using a hedonic form. As well as conducting objective tests including water content, vitamin C, fiber content, and antioxidant capacity in mango skin chips. Data analysis used tabulation and continued with the ANNOVA test. If there was a difference in the treatment, it would be followed by the Least Significant Difference Test (LSD). The results showed that there was an effect of the combined treatment of rice flour and tapioca flour on taste, aroma, texture and overall acceptance. And the results of an objective laboratory assessment showed that there was no significant difference in the water content, vitamin C, fiber, and antioxidant capacity of the mango skin chips. The most acceptable treatment result was the treatment with a combination of 70 g of rice flour and 30 g of tapioca flour. Mango peel chips with a 70:30 combination produced the best quality and was the most liked by the panelists. Keywords: Mango Skin Chips, Organoleptic quality,nutrient content
