Abstract
THE EFFECT OF ADDING GUAVA JUICE (PSIDIUM GUAJAVA LINN) AND BUTTERFLY PEA EXTRACT (CLITORIA TERNATEA L..) TO THE CHARACTERISTICS OF ICE CREAM ABSTRACT Ice cream is a semi-solid food made by freezing. Guava is a green fruit with red flesh that tastes sweet and sour. Butterfly pea is a flower that is high in antioxidants. The purpose of this study was to determine the effect of adding guava juice and butterfly pea extract to the characteristics of ice cream. This type of research is an experimental study using a randomized block design (RAK) with 5 treatments and 3 replications. Namely P1 the addition of 47.5% guava and 2.5% butterfly pea extract, P2 the addition of 45% guava and 5% butterfly pea extract, P3 the addition of 42.5% guava and 7.5% butterfly pea extract. , P4 the addition of 40% guava and 10% butterfly pea extract, and P5 the addition of 37.5% guava and 12.5% extract. The data obtained were processed using Microsoft Excel and analyzed using the SPSS application with the ANOVA test and the BNT test. Subjective analysis P1 and P5 were declared as the best treatments, with protein content of 3.39%bb, fat content of 3.66%bb, antioxidant capacity of 9.53 mg/L GAEAC and vitamin C 97.71 mg/100g in P1. Then at P5 the protein content was 3.03 %ww, the fat content was 3.09%ww, the antioxidant capacity was 19.18 mg/L GAEAC and vitamin C was 109.82 mg/100g.
